BACON AND GREEN ONION FRITTATA
I am very particular about the bacon I purchase. I only buy the naturally cured artisan, no nitrates, or other chemical preservative type. It is available at most markets.
If you really want to go fancy, you can substitute imported Proscuitto, which typically is naturally cured as well. The better products have no artificial preservatives.
-Pre heat oven to 350 degrees. You will need to use your broiler for any Frittata. My broiler temperature is adjustable. If yours is not, simply turn your broiler on, and bring the rack down to approximately 6-8 inches away from flame.
-11 ounces lean bacon diced
-9 large eggs
-1/2 cup sour cream
-4 green onions diced
-3/4 cup shredded semi soft cheese, such as: Gruyere, Sharp Cheddar, Edam. It’s your choice.
1. Sauté Bacon 5 minutes until cooked but not crisp in a 10 inch cast iron skillet. Add onion, and sauté another 2 minutes.
2. In a medium sized bowl, whip eggs and sour cream together by hand. Add a few grates of fresh ground pepper.
3. Pour eggs over bacon, and cook for two minutes on stove top, leave flame running, and put under broiler for two minutes. Do one more rotation, with the last broiler rotation, sprinkle grated cheese on top prior to placing under broiler for final cook.
Let Frittata rest for 5 minutes before serving.
