A favorite of children,  and mommies alike.  Simple, nutritious, and speedy to make.  Macaroni skillet is another, “formula” style recipe.  As long as you have the three basic ingredients; meat, pasta and liquid,  you will have a one skillet,  satisfying meal.  If you want to add seasonings, or vegetables,  the creative possibilities are endless.


1 Tbsp olive oil for browning meat

1 pound ground meat,  such as turkey, chicken, beef, or a combination of pork and beef.

1 medium onion, chopped

3 cups tomato juice,  or 1 14 oz. can of tomato sauce,  and the equivalent of stock.  Or,  all stock and no tomato.  This is the beauty of this dish.

1 Tbsp. vinegar

1 tsp. salt

1/8 tsp. pepper

1 cup elbow macaroni,  uncooked  (I have tried other pastas,  and elbow is the best for this recipe)


Brown meat with olive in skillet.  Add all remaining ingredients, cover and simmer 20 minutes or until macaroni is just cooked. stir a few times during cooking process to prevent sticking.


Add 1 cup shredded sharp cheddar cheese for cheesy mac,  kids love it!

Add paprika during cooking time, and sour cream at the end for a quick Goulash.

Use a combination of diced tomatoes,  along with tomato sauce,  1 clove of garlic,  and fresh or dried Italian herbs for a mediterranean style dish.
