Oatmeal Chocolate Chip Cookies
This is my favorite chocolate chip cookie recipe. Texture is everything, and I love how they are crispy on the outside, and chewy on the inside. More often than not, I end up using leftover dry cereal in place of the oatmeal, providing it’s a healthy, low sugar product.
1 stick salted butter or stick unsalted butter + 1/2 teaspoon additional salt to recipe (softened)
2/3 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 cup oatmeal, or unsweetened cereal. (great way to clean out the pantry)!
1/2 teaspoon baking soda
1/2 teaspoon salt
8 ounces semi sweet chocolate chips
1 cup chopped walnuts (optional)
1. In a large mixing bowl with the paddle attachment, mix the butter with the sugars until smooth. Add the egg, and vanilla, and mix for 1 more minute.
2. Add the flour, baking soda, and salt. Mix well. Add chocolate chips, and mix briefly.
3. Spread dough on wax paper, or parchment, and make into logs, about 2-3 inches in diameter, Place in refrigerator for minimum 10 minutes to stiffen. Remove paper, and slice into 1 inch disks, Place disks on Parchment lined cookie sheet, and bake in a pre-heated 350 degree oven for 9 minutes (they are better a little undercooked), cool (or not) and enjoy!
Alternatively, prepare as a drop cookie. They’re just as good, but not as uniform.
