2 egg yolks
2 ounces granulated sugar
1 teaspoon vanilla paste
3 fluid ounces Champagne
Step 1. Whip the egg yolks, sugar, vanilla and champagne together in a medium sized bowl, and place over simmering water in a bain-marie. Be mindful to not over heat or the yolks will scramble.
Step 2. Continue to whisk until the mixture reaches ribbon stage. Ribbon stage is when the custard falls like ribbons from the whisk when it is lifted from the mixture.
Serve warm on top of fresh berries or fruit.
