Kir royale is a simple cocktail that originated in France. It is perfect to serve to guests just before dinner to whet the appetite, just when the afternoon light turns into the evening glow.
It is simply 1 part Creme de Cassis, and 9 parts champagne. Usually I would simply prefer a glass of brute champagne, but if you are looking to add a little pizazz to a special occasion or holiday, put the Creme de Cassis in the bottom of the wine glass, and top with champagne. If you are using white wine instead of champagne, then the drink is simply referred to as a Kir.
